Pacific Foods: Man-Friendly Casserole

Interrupting my Thanksgiving long weekend recapping to bring you this sponsored post for Pacific Foods. You can read the full-version over on their blog!

I recently started doing some cooking on my own, but with other peoples’ recipes. So imagine my excitement when I created my OWN recipe! Casseroles are a great “first recipe creation” because they seriously are just a bunch of ingredients mixed together in a pan and then heated in the oven. Have pan and oven, will casserole!

Right before the star ingredient – the beans – was added!

I dub this the Man-Friendly Casserole because I made it with my main man – my dad – in mind. My mom was still down in Florida at our condo but he came home to go back to work. So on a Sunday afternoon, I put together this casserole for the two of us to share the next night. It was super easy to throw in the oven and heat up after we both got home from long days at work and the gym. The size was perfect for two. Also the only green in it came from peas, which bros just adore because you can’t taste them.

Man-Friendly Casserole

Ingredients:

  • 1/2 to 1 lb of herb-roasted turkey breast (depending on how big your casserole pan is) –> I used leftovers from the Pond House Grille cooking class I attended the same weekend
  • 1 package of Pacific Foods Organic Baked Beans with Pork
  • 1 package of frozen peas
  • 1 piece of cornbread
  • 3 oz of cheese of your choice (I used feta on my half, my dad used mozz on his half)
  • 1 Vidalia onion (use as much as you’d like)
  • 1/2 Tbsp of olive oil
  • salt & pepper (to taste)

Mixed up in the bowl.

Directions:

  1. Chop turkey breast into bite-size pieces and add to large bowl.
  2. Heat frozen peas (microwave or stove-top) and add as many as you’d like to bowl – I used half a bag.
  3. Chop as many rings from the onion as you’d like and saute in olive oil. Add to bowl.
  4. Pour baked beans over the mixture, add salt & pepper as desired, and mix well in the bowl.
  5. Pour bowl’s contents into casserole dish, evenly distributing the mixture. Crumble cornbread on top (as much as you want to use).
  6. Add cheese atop casserole (as much as you want to use).
  7. Heat uncovered on top rack of oven at 350 degrees (F) – 30-40 minutes, depending on how done you want the top.

Cornbread crumble topping!

And since my dad is a white wine guy, we paired this casserole with NV Cantarutti ‘Canto’ Colli Orientali del Friuli, an Italian white blend (Tocai Friulano, Pinot Bianco, Sauvignon Blanc). Truly an entire meal fit for him! I’m pleased to report that my dad loved the casserole and so did I…sorry, no leftovers! My mom wants the recipe – oh how the roles have changed!

Didn't get a picture of it just out of the oven, so you'll have to settle for this half-empty pan photo I took when I went back for seconds.

I mixed mine in a bowl with some baby cabbages to make this man-friendly dish also Caitlin-friendly!
