On The Up and Up in Florida!

I hope you guys enjoyed my recap of my father/daughter traditional trip to NYC! It was a great time but the food and drinks definitely got to me and my travel day to Florida this past Sunday was a bit rough in a mental sense. I just felt gross the entire day after getting up really early for my flight (I got around 6 or 7 hours of sleep but Sarah understands…I swear any less than 8 and I’m a mess). I was wearing a slobby travel outfit, had on my glasses, and my hair was in a not-so-chic rat’s nest bun. I felt ridiculously dehydrated, so much so that I couldn’t even finish a little bit of coffee. My pants felt tight (even pants of the yoga variety!) and all I felt like doing once we got to yoga was 40 minutes of P90X Yoga…not nearly “enough”, in my head. To be honest with you, I found myself restricting my intake all that day. I just wanted to feel better about myself. It didn’t really work…it often doesn’t. That’s the lesson I seem to still be learning.

What DID make me feel better was having a snack after yoga, taking a shower, and deciding to make myself look presentable for our dinner at Duffy’s. I always visit this local chain when I visit; my family consistently looks forward to our Duffy’s dinner. So that was a perfect destination for our first night in town. Putting in some extra effort to blow-dry and straighten my hair, and also putting on a cute breezy outfit, definitely had me feeling better upon our arrival at the restaurant.

My First Thinking Out Loud Thursday!

I definitely am feeling some of that pre-holiday and pre-vacation stress, and also trying to figure out where 2014 will take me. I need to make some big decisions about my career, my location, and just how much uncertainty I can handle. I have SO much on my mind that I figure it will help get it all off my chest to think out loud a bit.

1. I cannot stand the aforementioned uncertainty. I have no idea what I’ll be doing or where I’ll be this time next year. Okay, maybe I have some small idea of where I’ll be. But what I’m doing? I don’t even know. I keep wishing for something to come along that will be a huge “sign” and tell me exactly what to do with my life and what direction to go in and what decision to make and when to make it. I know, be careful what I wish for, because that something could end up being awful!

Pacific Foods: Man-Friendly Casserole

I recently started doing some cooking on my own, but with other peoples’ recipes. So imagine my excitement when I created my OWN recipe! Casseroles are a great “first recipe creation” because they seriously are just a bunch of ingredients mixed together in a pan and then heated in the oven. Have pan and oven, will casserole!

I dub this the Man-Friendly Casserole because I made it with my main man – my dad – in mind. My mom was still down in Florida at our condo but he came home to go back to work. So on a Sunday afternoon, I put together this casserole for the two of us to share the next night. It was super easy to throw in the oven and heat up after we both got home from long days at work and the gym. The size was perfect for two. Also the only green in it came from peas, which bros just adore because you can’t taste them.

Thanksgiving Eve With Nana C!

I have so much to say about the long Thanksgiving weekend and it will take several (as in four) posts to do so, but that’s okay. You guys can just look forward (I hope) to a week of  fun-filled recaps, with a pinch of thought-provoking reflections. Last time my Nana Connie visited us (in June), I was bummed that I didn’t have time to take her to one of my special favorite restaurants. So I knew that for her Thanksgiving visit, I had to bring her with me to Barcelona West Hartford for Thanksgiving Eve. I spent the night before Thanksgiving there last year (with Molly) and it was so great! And who better to spend it with this year than Nana Connie?

WIAW: I Cooked!

Whenever I do a What I Ate Wednesday post (thanks Jenn!) that features at-home meals, it shows off my mom’s amazing healthy dishes. Truth (though I’ve never been secretive about this): pretty much every one of my recipes was created by her. Well today I’ve got something new cooking…two dishes THAT I MADE. They may not be recipes I created (I’ll be sharing one of those later!) but they are recipes I took from my Recipes I’d Actually Make Pinterest board. And now I’m able to take a cue from Sam and move those two recipes to a board titled I MADE THIS. Yes in all caps, because I”m that excited about it.

The reason I don’t have much experience with cooking is because I live at home to save money (I always feel the need to throw the reasoning in there…I’m not a 30 year old living it up in my parent’s basement – although my room IS in the basement). My mom is an awesome cook and she always makes super-healthy dinners for me. Believe me it’s come in handy especially given the fact that I do the gym after work, and when I get home I am just hungry and ready to chow down after my shower. But I won’t be living at home forever and I definitely have been fearing getting too content with my mom’s cooking and too dependent upon restaurants, take-out, and the Whole Foods salad bar. My parents have been spending more time than ever in our FL condo so I decided it was the perfect time to practice my cooking!

Mom’s White Bean Chicken Chili

This past Tuesday night I settled in no the couch with a perfect fall dinner (especially given the cold temperatures that evening)…a steaming bowl of white chicken chili with added turkey sausage and roasted zucchini. My Instagram of the meal got lots of positive feedback, and a few recipe requests. (This is also the same chili I enjoyed after my night out on Wednesday).

March of Dimes CT Signature Chefs Auction

I attended this event free of charge as a media volunteer. All opinions of the evening are my own.

You’ve heard me talk about the 75th Anniversary March of Dimes Signature Chefs Auction Gala a few times now. The event seemed so far away when I first connected with Leigh-Anne Lefurge, State Director of Communications for the Connecticut chapter. She, Marc Spencer (Senior Community Director), Kaitlin, and I worked together to spread the word via social media and get more restaurants involved. I could hardly believe it when I woke up this past Thursday morning knowing the event was already here!

WIAW: Agave Grill Girl’s Night

I don’t usually do a day-in-the-life WIAW. What I eat on weekdays doesn’t tend to change. So today’s What I Ate Wednesday post is about What I Ate at Agave Grill in Hartford, CT. As I mentioned on Monday, Kelly was in CT this past weekend so she and I planned a Saturday dinner date literally MONTHS ago. That girl knows how my schedule tends to go.

And I know how Agave’s tends to go: the space is quite small, and they don’t even take call-ahead seating on weekends (something my mom and I found out during my first visit a couple of years ago). Thankfully I connected with Hartford Restaurant Group‘s Jonathan (fun fact: they also operate TD Homer’s in Southington and Wood-N-Tap in EVERYWHERE) awhile back through this blog, and he was kind enough to score Kelly and I a rare Saturday night reservation for two. Thanks Jon!

Marvelous Massachusetts and Plan B

Man, I definitely need positive reminders of marvelous on this Monday morning. My morning commute involved a nose bleed and the shocking realization that my car’s tissue stock was depleted long ago – and never had been replenished. The fall air is here, with a vengeance!

Marvelous is…finally visiting my darling blend Kelly in Massachusetts! About a month ago, we made a plan for me to stay over this past Friday to Saturday. The timing could not have worked out any better and I was so happy to be able to be there for Kelly and her family during a tough time in their lives.

We’ve hung out a bunch on my CT turf, but this was my first visit to hers in MA!
